Rub the lamb shoulder with salt, pepper and olive oil to taste and bake it at 150º C for 45-50 min. Once the time has elapsed, leave it to cool for about 10 min.
Then, shred the meat, mixing it with the juices released by the shoulder in the tray during cooking.
Place a generous amount of meat on a waffle and cut the fresh basil leaves into strips and spread them on top. We will then crumble a piece of feta cheese with our fingers.
The icing on the cake is the mandarin caviar. A citrus detail for a rounded finish. Peel a mandarin and remove the membrane from the segments. You will discover that each wedge is made up of an infinite number of little balls. Take them out carefully and spread them on the plate.
Finally, take a spoonful of the meat juice and soak the contours of the waffle. Enjoy!
